Yesterday I posted a Help Tweet to find this recipe, and got many responses to share the recipe when I got it. It took a lot of research, and ultimately I found it in my recipe box (who'da thought right?).. So here it is.. I'm pretty sure it comes from my Gramma.
6 Tbsp Unsweetened Cocoa Powder
1 1/2 C Sugar
1/2 C Butter
1/2 C Milk
1/2 C Creamy Peanut Butter
1 tsp Vanilla
3 C Oats
In a medium saucepan over medium heat, combine cocoa, butter, milk, and sugar. Bring to a boil (where bubbles are all over the surface), continue to boil for 1 1/2 minutes, stirring constantly.
Remove from heat. Stir in peanut butter and vanilla until creamy and well blended. Add the oats, combine thoroughly.
Drop by teaspoonful onto wax paper. Let cool about one hour, until firm. You can speed that up by putting them in the fridge if you want.
The good thing about this recipe is that its pretty easy to customize, use crunchy peanut butter, add in some nuts, dried fruits, etc. Enjoy! : )
